Southern Summer Squash and Onions one of my favorites and a classic side dish! Tender sweet squash and sweet Vidalia onions slow cooked in butter to tender.

Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook them until they start to soften and turn translucent. Now, add the squash and zucchini slices to the skillet. Spread them out evenly. Cook the vegetables for about 8-10 minutes, stirring occasionally, until they become tender but still have a slight crunch.

Directions. Melt ghee in a large nonstick skillet over medium heat. Add onion and cook, stirring occasionally, until soft and fragrant, about 2 minutes.
