Package, seal and freeze. Blanch 3 minutes. The easiest way to blanch zucchini is in a large kettle of boiling water. Allow 1 gallon of water per pound of zucchini. Bring the water to boil and lower sliced or cubed zucchini into the water, allowing the water to continue boiling. Cover and start counting the blanching time.

Pour the rest of the seeds into a colander and spray with water until all the extra flesh has washed away. Spread the cleaned seeds onto a fine screen or wax paper and allow them to dry for a few days. Mix them periodically throughout this process to assure no moisture is left on the seeds.

Overripe zucchini are tough, pithy, and unpalatable. Harvest them immediately and use them for baking zucchini cake or muffins. Grated zucchini can also be frozen to make winter baking a snap! One of my favorite dish to use with large zucchini is to make zucchini bread. I've done this for many many years. Although when you're shredding the zucchini you want to take out as many of the large seeds before mixing or freezing. By freezing the shredded zucchini in 2 cup freezer bags, you can pull out a bag to make any time during the year.

Over ripe zucchini is an excellent substitute for tomato casserole, and it can also be used to make overripe zucchini. Zucchini fries can be cooked in the oven or in a fryer, depending on the recipe. When served as an alternative to pizza for children, cheese breadsticks are a healthy alternative.

Ripe zucchini will feel slightly firm, but not too hard. Avoid zucchinis that have a soft or mushy texture, as they are likely overripe and may have a bland or unpleasant taste. Another indicator of ripeness is the presence of a slight shine on the skin of the zucchini. This shine is a result of the natural oils that develop as the zucchini.

Seeds: Check the seed cavity of the zucchini. If the seeds are small and immature, it is a good indication that the zucchini is ripe. However, if the seeds are large and fully developed, the zucchini may be overripe. Texture: The flesh of a ripe zucchini should be tender and crisp.

The beautiful yellow zucchini pictured above is butterstick F1, seed from Renee's Garden. This one has gotten too big. Though not always easy, it's best to harvest zucchini when they are under 7โ€ณ. If you let them get too big, seeds form in the cavity, the taste changes from sweet to mealy, with a watery texture, and the plant will stop.

Measure the length of the zucchini. The ideal size for harvesting is around 6 to 8 inches long. Anything beyond this might indicate an overripe zucchini, which can be tough and less flavorful. Step 3: Feel the Texture. Gently press your fingers onto the zucchini's skin. A ripe zucchini should feel firm but slightly yielding.

In a medium bowl, toss together the zucchini, mayonnaise, ranch dressing, garlic powder, black pepper, and Parmesan cheese. Spoon the mixture into a 9-by-13-inch baking dish or roasting pan and bake for 20 minutes. Sprinkle with the bread crumbs and broil for 3 to 5 minutes, until golden brown and crisp.
