Mirza ghassemi or mirza gassemi (میرزاقاسمی in Persian) is a popular Iranian appetizer prepared with roasted eggplants, which are usually cooked in a tandoor oven. The eggplants are complemented with tomato, garlic, olive oil, salt, pepper and then completely joined with eggs. This dish is considered a casserole and is generally eaten served over white rice or accompanied with bread.
