Ogo is also known as limo in some markets in Hawaii. It has a fluffy texture and a deep reddish-brown color when fresh. Ogo is wonderful when served raw in salads, in cold broths, with shellfish preparations and with ceviches or sushi. When cooked, ogo turns from a reddish-brown to a deep green color. It can be steamed or used in cold infusions.

Put the ti leaves on the dough to protect the fish from the salt (the top of the fish will be protected by the skin). Arrange the spinach on the ti leaves with the two filets skin up (laying side by side) on the top of spinach. Wrap the onaga in the rock salt dough and shape the dough like a fish. Bake in the oven for 25 minutes at 375 degrees.

Squeeze the water out and cut the ogo into smaller pieces, about 1 inch (2.5 cm) long. Thinly slice ¼ sweet onion lengthwise. Thinly slice 2 green onions/scallions. Cut 1 lb sashimi-grade tuna into bite-sized cubes, about ¾ inch (2 cm). Transfer the tuna to a large bowl.

Pickled Ogo. 4 oz. Kombu Pickle Liquid (see recipe below) 8 oz. ogo (seaweed) 2 oz. ginger, grated 4 oz. onions, sliced 1/8 oz. Hawaiian chili pepper Kosher salt, to taste. Note: Abad recommends the fine, feathery variety of ogo, rather than the thicker, more stick-like type. Place all ingredients in a container, mix and taste for seasoning.

Directions: In a medium pot over high heat, bring a water to a boil and quickly blanche the ogo for about 2 minutes. Drain well; chop into 4-inch sections; set aside. In a large mixing bowl, combine sesame oil, sesame seeds, garlic, onion, Hawaiian chili pepper, apple cider vinegar, shoyu and sugar; mix well. Add limu to mixture and mix well.

1/4 cup large diced pickled radish (optional) 2 tbsp Sesame Seeds Directions Bring water to boil in large boiling pot. Place Ogo in pot for 4 minutes then drain and cool in cold water or ice bath. Combine all ingredients and pour over ogo. Let marinate for at least 4 hours but will still be good to grind up to three weeks later!

Blend garlic with a splash of water until texture resembles wet sand. 4. Remove onaga from the refrigerator and season with Hawaiian salt. Add the onion purée, garlic purée and all other ingredients except for lime juice. 5. Let mixture sit for five minutes to marinate, then add lime juice.

Bring to a boil and heat through until the sugar and salt have dissolved. Set this aside to cool slightly. Thinly slice onions and place into a jar or container. Pour the pickling liquid over the onions until completely submerged. Allow to cool at room temperature. Place the lid on and store in the refrigerator.
