Taste for seasoning + add more salt/pepper/lemon juice to taste. In a large salad bowl, toss together the two greens. Add the dried fruit, fresh blueberries, asparagus, onions + nuts. Pour 1/3-1/2 cup of the dressing over the top of the salad mixture + toss to combine. Serve the salad with the extra dressing on the side.

Ingredients for the Dressing (with Substitutions) Fresh ginger & garlic. Finely mince, or use a microplane to grate. In a pinch, you can sub in about 1/4 teaspoon of dried ginger and garlic. Soy sauce. Use gluten-free tamari, liquid aminos, or coconut aminos if needed. Rice vinegar.

Instructions. Chop or tear the iceberg lettuce into bite size pieces, then rinse, drain, and spin the lettuce dry. Thaw peas in a strainer/colander under hot water until thawed and bright green, then immediately rinse and drain them with cool water. Cook bacon until crisp and drain fat on paper towels. Add the onions and celery to the chickpeas along with the mayo, mustard, optional dill relish and lemon juice. Give it a good stir and adjust to taste. Feel free to add more mayo if you prefer your vegan tuna salad a little creamier. Add more mustard, pickle relish, or lemon juice if you're craving some extra tang.

Put lettuce into salad bowl. Sprinkle with sugar, salt, and pepper. Add peas, cheese, onion, Mayo and mir whip. Cover tightly and refrigerate overnight. Chill. Toss when ready to serve and garnish with bacon.
