Sardi's is a "casual peruvian chain" which is well known for its pollo a la brasa chicken. I absolutely love Sardi's, but their meals can be a bit too pricey for my graduate student budget. So instead I set out to recreate my favorite dish at home. I tried my best to closely mimic Sardi's' pollo a la brasa with aji verde (spicy peruvian green sauce) but since I'm obviously NOT peruana and.

Aji Verde Ingredients. The girl behind the counter said the sauce was made with cilantro, jalapeño, Parmesan and lime juice. I deduced that she must have forgotten to mention mayonnaise, since the sauce had an unmistakable mayo-like consistency. I also added garlic, to match the restaurant sauce's pungent flavor.. Aji verde is often made with Cotija cheese, not Parmesan.

I love about anything with cilantro, so this sauce fits the bill. This sauce is best prepared a few hours (or even a day or two) ahead so the flavors will meld. Instructions. Break the bottom half of the stems off the cilantro and discard. Place all ingredients in the bowl of a food processor. Lock the lid into place and puree until the mixture is very smooth. Taste, then add additional salt if needed. Cover and refrigerate until ready to serve.
