So I used a small cookie cutter to make circles. Such a fun way to eat a really delicious dish. Use the tofu scraps for a scramble!

The word S campi usually refers to a large shrimp, prepared in garlic sauce, and served over pasta or bread. Instead of shrimp, we made it one of our more affordable food recipes by using mushrooms. 2 large shallots 3 cloves garlic 4 tbsp. vegan butter (such as Earth Balance) 5 tbsp. extra virgin olive oil 1 package firm tofu 1/2 tsp. red pepper flakes 3/4 cup dry white wine 1 lemon (zest & juice) Salt & pepper 1 handful fresh parsley Directions Cook the linguine according to the instructions on the package, and set aside.

Preheat oven to 400 degrees. Press tofu by placing it on a plate covered with 3 layers of paper towels. Cover the tofu with 3 more layers of paper towels and put a weight on top. (I use a large can from the cupboard.) Press it for 30-60 minutes, changing paper towels if needed. Then pat the tofu dry and slice into 1-inch cubes.

Shrimp Scampi ZAVORÂź

Heat olive oil in a large pan and place the tofu seasoned side down. Sprinkle the remaining spices on the top. Cook over medium high heat for 3-5 minutes per side until golden. Remove tofu. Melt the earth balance in the same pan. Add onion. Cook until translucent.

Add in the tofu, stirring for a minute to allow it to soak in the sauce. Add in your desired amount of linguine, and stir everything together in the pan to coat the noodles with the scampi sauce. Transfer to plates or bowls to serve. Finally, chop up fresh parsley and sprinkle a little on top of each plate or bowl of scampi.
